Pemenang dalam Cabaran Lambassador Inovasi Lamb Australia untuk Ramadan dan Hari Raya

Sebanyak enam sekolah kulinari terkemuka berkumpul dalam satu pertarungan mendebarkan untuk Cabaran Lambassador, pertandingan unik yang bertujuan untuk mempamerkan kepelbagaian kambing Australia dalam masakan moden yang diilhamkan oleh semangat perayaan Ramadan dan Hari Raya. Acara tersebut berlangsung baru-baru ini di Universiti Wollongong, Glenmarie, Shah Alam.

Penyertaan pemenang: Aussie Lamb Stroganoff  Gaya Asia  (Australian Chilled Lamb Racks) dan Duo Beef Buttermilk and Aussie Dendeng (Australian Chilled Beef Striploin) daripada pelajar kulinari Muhammad Fikri Bin Kamaruzaman dan Muhammad Nazhan Bin Noor Hisham (Kolej Komuniti Chenderoh, Perak) dibimbing oleh Duta Lambassador Chef Khairul Ashikhin.

Setiap pasukan ditugaskan untuk mencipta hidangan unik daging merah yang mencerminkan trend masakan kontemporari sambil menghormati rasa tradisional Ramadan dan Hari Raya.

Mereka hanya boleh memilih dan menggunakan sehingga 12 bahan untuk menyediakan kambing Australia sebagai hidangan tumpuan dalam pinggan perkongsian, disertai dengan makanan sampingan seperti daging lembu Australia, sayur-sayuran, nasi, mi dan lain lain lagi.

Kolej Komuniti Chenderoh, Perak, diisytiharkan Juara Cabaran Lambassador memenangi hadiah wang tunai RM1,000 dan sijil. Dalam pasukan tersebut, pelajar kulinari Muhammad Fikri Bin Kamaruzaman dan Muhammad Nazhan Bin Noor Hisham telah dibimbing oleh Duta Lambassador Chef Khairul Ashikhin.

Juara Cabaran Lambassador ialah Kolej Komuniti Chenderoh, Perak. Dalam pasukan itu ialah pelajar kulinari Muhammad Fikri Bin Kamaruzaman dan Muhammad Nazhan Bin Noor Hisham. Mereka dibimbing oleh Duta Lambassador Chef Khairul Ashikhin.

Pasukan juara menerima hadiah wang tunai RM1,000 dan sijil. Penyertaan kemenangan mereka ialah Aussie Lamb Stroganoff Gaya Asia (Australian Chilled Lamb Racks) dan Duo Beef Buttermilk dan Aussie Dendeng (Australian Chilled Beef Striploin).

Universiti Wollongong Malaysia (UOWM) memenangi naib juara pertama, hadiah wang tunai RM800 dan sijil. Pelajar kulinari Leong Tze Jian dan Caleb Chin Kai Zheng dibimbing oleh Duta Lambassador Chef Eric Siew.

Naib juara pertama ialah pasukan dari Universiti Wollongong Malaysia (UOWM), dengan pelajar kulinari Leong Tze Jian dan Caleb Chin Kai Zheng. Mereka dibimbing oleh Duta Lambassador Chef Eric Siew.

Pasukan itu menerima hadiah wang tunai RM800 dan sijil. Kambing Salai Masak Lemak Cili Api (Australian Lamb Flap) dan Kerutuk Kebabas (Australian Chilled Beef Striploin) adalah penyertaan mereka.

Naib johan kedua Kolej Antarabangsa RichTalents, bersama pelajar kulinari Nur Annatasya Saffiya Binti Azizul dan Nurul Nusratina Binti Zulkifli yang dibimbing oleh Duta Lambassador Chef Mohd Ridzwan Rasit. Pasukan itu dianugerahkan wang tunai RM500 dan sijil.

Naib johan kedua disandang Kolej Antarabangsa RichTalents, dengan pelajar kulinari Nur Annatasya Saffiya Binti Azizul dan Nurul Nusratina Binti Zulkifli. Mereka dibimbing oleh Duta Lambassador Chef Mohd Ridzwan Rasit. Pasukan itu dianugerahkan wang tunai RM500 dan sijil.

Mereka melakukannya dengan baik dengan Kambing Aussie Bakar yang dihidangkan dengan Sambal Kicap Strawberi diiringi Kari Kentang Putar dan Sayur Tumis (Chilled Australian Lamb Leg Bone-in); dan Daging Lembu Aussie Botok-Botok Melayu Klasik dengan Pastri Puff menggunakan Chilled Australian (Chilled Australian Beef Rump Cap).

Tema pertandingan adalah gabungan teknik memasak tradisional dan moden, dengan tumpuan kepada kualiti dan kelestarian. Mengikut garis panduan ini, pasukan dijangka menghasilkan resipi baharu, mudah dan praktikal dengan potongan kambing dan daging lembu Australia dengan kambing sebagai hidangan utama dalam hidangan sedulang sekeluarga untuk ibu bapa yang sibuk bekerja dengan anak.

Pelajar kulinari Kolej Komuniti Chenderoh, Perak, Muhammad Fikri Bin Kamaruzaman and Muhammad Nazhan Bin Noor Hisham, menerangkan hidangan perkongsian mereka kepada para hakim.

Cabaran Lambassador menjemput pasukan dari institusi kulinari berprestij untuk menyediakan, memasak, dan memasarkan hidangan inovatif yang meraikan rasa yang kaya dengan daging kambing dan lembu Australia. Para peserta berpeluang dibimbing oleh duta chef Lambassador dalam penyediaan dan memasak kambing dan daging lembu Australia.

Para peserta bukan sahaja mempamerkan kemahiran masakan mereka tetapi juga mempelajari teknik memasak yang berharga, mise en place, perancangan dan strategi untuk mencapai formula kemenangan semasa bekerja dengan duta chef Lambassador.

Para hakim, termasuk duta chef Lambassador yang dihormati, pemimpin pendapat utama dan pemimpin industri makanan, menilai pasukan berdasarkan kreativiti, persembahan, rasa, praktikal dan keberkesanan strategi pemasaran mereka.

"Kami sangat teruja untuk menganjurkan Cabaran Lambassador dengan kerjasama Universiti Wollongong, yang bukan sahaja menonjolkan kualiti luar biasa kambing dan daging lembu Australia tetapi juga memupuk kreativiti dan inovasi dalam kalangan chef generasi akan datang," kata Valeska, Pengurus Serantau untuk Asia Tenggara, Daging dan Ternakan Australia (MLA). “Acara ini adalah sambutan inovasi masakan dan penghargaan budaya, tepat pada masanya untuk Ramadan dan Hari Raya.”

Sebagai tambahan kepada pertandingan masakan ini, para peserta berpeluang mempelajari penyembelihan daging, memasak dan merasai pelbagai potongan kambing dan daging lembu Australia dalam kelas induk (masterclass) tiga minggu sebelum pertandingan daripada Jurusembelih Sarjana Australia di bawah Program Akademi Daging Australia.

Dah menjadi trend masa kini, chef juga belajar memasarkan masakan mereka selain menunjukkan kemahiran masakan mereka di media sosial. Oleh itu, satu komponen pasukan dinilai adalah bagaimana mereka mempamerkan hidangan mereka di media sosial. Semasa pertandingan kulinari ini, usaha media sosial mereka dirakam. Ia kemudiannya akan disiarkan dalam media sosial sebelum dan semasa Ramadan dan Hari Raya untuk meningkatkan kesedaran mengenai ketersediaan produk kambing dan daging lembu Australia.
